Chickpea and Avocado Mash

Serves 2-3

Ingredients
  • 1 can chickpeas, drained or equivalent weight of organic dried chickpeas (garbanzos) cooked as per guidelines
  • 1 ripe avocado
  • Himalayan salt & cracked black pepper
  • Drizzle of flax oil
  • Pinch of cumin
  • Optional: herbs of your choice – coriander, basil, parsley

Instructions

In a bowl, mix together chickpeas, avocado chunks, salt & pepper along with the cumin and the optional herbs. With a potato masher or large fork, mash together leaving some whole chickpeas. Drizzle with the flax oil, add a dusting of paprika if you like it fancy and serve.
